Sara welcomes us into her home in Taormina, a jewel in Sicily’s crown famous for its stunning countryside and fascinating history and archaeology, not to mention its cuisine! This region represents the meeting of cultures, resulting in a mixture of traditions that can be tasted in its traditional dishes. Discovering Taormina and Sicily is a joy both for the heart and the palate! 

Sara’s dedication to Sicilian cuisine is the result of a lifetime of enjoying her local cuisine, leaving her with many recipes passed down through the generations of her family. “You can discover so much about Sicily’s history through its traditional food”, she explains, “there have been so many influences on the island over the years; Greek, Roman, Arab, Norman, Swabian, Aragon… And each one left its own unique imprint on the architecture, culture and even on the dialects we use today.”

To begin this Taste Experience, Sara chooses an antipasto that makes the most of Sicily’s sun-kissed citrus fruits, and serves an inviting orange salad, a fresh and flavoursome start. 

Next, we have a classic Sicilian first course, pasta alla norma, which brings together simple ingredients with a delightful result: aubergine, tomato, basil and salted ricotta come together for a marriage made in heaven! 

Sara serves a fish dish for the second course, ‘calamari all’agghiotta’, which brings together squid, salty capers and olives and raisins for a touch of sweetness. On the side, we have more fresh fish, with a dish of sardines ‘a beccafico’, stuffed with breadcrumbs, pine nuts, raisins, a squeeze of orange and a touch of sugar. It’s a delight to the senses! 

To finish, we have a refreshing and creamy dessert; an almond blancmange, a dish that harks back to Sicily’s Arab influence!
