La Cesarina

Nicoletta welcomes us into her elegant home near the Duomo di Milano. Originally from Mantova, this Cesarina learned to cook at the age of nine, enthusiastically helping her mother and grandmother in the kitchen. She still has fond memories of perfecting the classic pasta ‘tortelli di zucca’ for the first time. Her cooking has a strong Mantovan influence, with strong and simple flavours.

An untiringly passionate cook, Nicoletta has managed to transform her passion for cooking into a sucessful career, which allows her to make the most out of her creativity every day.

The secret of the Cesarina
I avoid frying my vegetables, and instead cook all the ingredients together in a single pan over a high heat, adding a hint of tomato concentrate.

Menu

  • Bresaola, goat's cheese, lemon and roquette roulades on filo pastry
  • Warm rice salad with asparagus, fritters and shavings of Grana Padano cheese
  • Veal 'tonnato' in a tuna and caper sauce with eggplant and cherry tomatoes
  • Bavarian cream with peach and 'amaretti' biscotti

Description

To begin this Milanese Taste Experience, we have rolls of bresaola filled with caprino cheese, roquette and a squeeze of lemon, which is covered in crispy filo pastry.

Next, Nicoletta serves an inviting rice salad with asparagus, sliced omelette and shards of Grana Padano cheese, which is served warm. For the second course, we have delicate slices of ‘vitello tonnato’ accompanied by seasonal aubergines, courgettes and cherry tomatoes. The meat is served cold and flavoured with smooth egg, tuna and anchovy sauce, scattered with capers.

Finally, our Cesarina serves a delectable bavarian peach dessert, a tart made with fruit jelly and miniature amaretti biscuits.

Our time at Nicoletta's place was really a pleasure. Her home is really cute and placed in the very center of Milan which is defintely a plus.

She is a very kind woman and even if she doesn't speak english and we didn't speak Italian we understood each other perfectly and she was able to satisfy all our request and curiosities.

She also told us that cooking is her job and not just a passion, and,f or the people reading, trust me that she's awesome in what she does.

The dinner was flawless, I went absolutely crazy for every dish she prepared for us and was a very pleasing evening. Thanks to her and to the whole Cesarine organization. Both strongly reccommended!
