La Cesarina

At her home in Savignano Sul Rubicon, a few steps from the Roman bridge with three arches over the famous river, Sabrina keeps her precious traditional family recipes from her region: Romagna.

A narrow Appenine region near the Adriatic Sea, Romagna offers a cuisine based on simple, tasty and hearty ingredients. The Romagna cuisine is rich in dishes created from the most ancient traditions and finds its natural expression in an incredible variety of pasta dishes, the base of which is obviously homemade dough. The most popular specialty, Romagna-style piadina, is stretched out using a rolling pin on a cutting board and cooked in an earthenware baking dish.

“A lifelong love” is that which Sabrina has for the traditions and flavors of her region. Working from family recipes, our Cesarina proposes typical dishes from Romagna cuisine, starting with the antipasto: a variety of homemade piadine stuffed with country herbs and cheese.

The dining experience that Sabrina proposes continues with a very typical first course: strozzopreti con Stridoli. The Stridoli are the top of an herbaceous plant that grows in the wild; the recipe for Stridoli sauce (o Strigoli, as it is also known) is an old family recipe that has been handed down over time, and it makes a sauce which is delicious on either fresh or dried pasta. On to the second course: chicken cooked in a traditional earthenware pot, and to finish, two delicious homemade desserts.
