The starter chosen by Flavia to inaugurate this Experience of taste is a classic of the abruzzese cuisine; we have the traditional “pizza e foje”, a tasty cornflour pizza served with a fresh wild misticanza salad.
To follow, the delicious buckwheat “sagne”. Our Cesarina mixes this typical local pasta - which owes its intense flavour to the flour with which it’s made - with chickpeas. As a second, a veal roll flavoured with in season vegetables: the taste of the meat meets the scrumptious hues of the fresh vegetables, in a particularly rich and delicate result.
At this point, the only thing missing to end the lovely meal is dessert: Flavia has made 'Ultrasquisita', “extra-delicious”, a multilayered dessert which combines the softness of shortcut pastry and french meringue with the intriguing flavours of ricotta cream, chocolate, cherries and cedar. A recipe inherited from grandmother Carmelina, who would often prepare it on feast days.
