Paola welcomes us into her loft in the heart of Bologna, a short walk from Piazza Maggiore and the main monuments. The street she lives on will lead you past medieval mansions, with centuries of history are hidden behind every corner. Paola's flat looks out over the typical red roofs of the city center of Bologna.

An architect by profession, Paola likes to devote herself to cooking in her spare time. Her dishes are obviously rich in local tradition, with a focus on meat dishes and delicious vegetables.

The Taste Experience immersed in the flavours of Bologna starts with the delicious omelettes with vegetables selected by our Cesarina in her organic market. Following this, the dish that gave international fame to Bolognese cuisine. We are obviously talking about the tagliatelle with ragù sauce, egg pasta strips with a rich meat sauce. A simple but delectable dish.

The combination of meat and vegetables continues for the second course, with stuffed zucchini. Nothing is discarded from this vegetable: the pulp is removed and then mixed with the meat, and the resulting mixture is used as a filling. This is accompanied by local seasonal vegetables chosen with care by Paola and strictly homemade bread.

To end the meal, a typical Bolognese cuisine dessert: 'pinza' with homemade jam, a dessert of peasant origin which combines dough and jam stuffed with prunes and orange peel, for a distinctive flavor.

They also spoke perfect English, having lived in Canada for many years. Gianni taught us how to make tortellini from scratch which we ate with our meal.
