La Cesarina

Leda and Giuseppina welcome us into their beautiful apartment just outside the walls of Bologna. Their home is full of art and antique furniture that Leda’s parents collected over the years. The walls are also decorated with Leda’s own artwork, as she loves to paint on her summer holidays, which she usually spends in Greece.

Their passion for cooking spans back to childhood, when they would help their grandmothers make the Sunday lunch, a time of the week when the whole family comes together around the table. Their mothers, and shelves of cookery books have also helped Leda and Giuseppina to hone their skills. They both work in a medical research laboratory, and their professions have led them to contribute to publications that encourage healthy eating.

We begin this Taste Experience with an appetising starter; crispy pastry cases filled with a light mousse made from mortadella, Bologna’s signature ham. This is accompanied by a glass of sparkling Pignoletto wine, for a truly Italian aperitivo.

Next, the Cesarine serve typical bolognese lasagne, one of the city’s most famous dishes. Layers of fresh egg pasta are alternated with ragù and lashings of béchamel sauce for an absolutely sumptuous first course. For the second course, we have roast pork loin in cream; the finely sliced meat is slow-cooked in a creamy sauce, which adds tenderness and delicate flavour. This is served with crispy roast potatoes with rosemary and garlic – a marriage made in heaven.

Finally, for dessert, Leda and Giuseppina serve an indulgent ‘zuppa inglese’, a classic creamy dessert made with layers of Alchermes-soaked sponge cake, cream, and cocoa powder.
