"This Taste Experience is a celebration of the warm distinctive flavours of my region," explains our Cesarina, Anna Clelia, "these are my typical local dishes, adapted especially for the winter."
To begin the Taste Experience, Anna Clelia serves a rich and varied starter: seasonal vegetables ‘au gratin’ with cardoncelli mushrooms in olive oil.
The first course is an iconic Pugliese dish, handmade orecchiette pasta made with spelt flour, served with cabbage and delicious smoked ‘guanciale’ pork. For the second course, another feast of flavours; a leg of lamb with roast potatoes. Second course is served with a fresh side of julienne carrots and puntarelle in lemon and extra virgin olive oil.
To round off this celebration of Puglia’s flavours, Anna Clelia serves a ‘bocconotto’, a pastry with crème pâtissière and cherries, infused with olive leaf liquor.
