At Emanuela and Carlo's table, the Taste Experience begins with Gaeta olives and anchovies marinated with white wine, vinegar and fennel seeds, accompanied by a delicious sage-infused wine.

At the end of the appetizer entrée comes Carlo's traditional family dish: rice with curly endives, a recipe that he learned from his grandmother. It's simple and authentic dish, made from onion, tomato and rice. The next entrée is cuttlefish with peas from Roman gardens.

The side dish highlights Emanuela's culinary skills: baby Swiss chard sautéed with anchovies, tomato, garlic and chili peppers. From her mother Renata, Emanuela also learned the cake recipe that perfectly ends this Culinary Experience: a ricotta tart scented with Sambuca liqueur. All dishes are accompanied by the great wine, Est Est Est of Montefiascone.

Emanuela and Carlo live near Monte Sacro, the historical Roman hill, which stands alongside the Aniene river. Originally known as the garden city, the area preserves authentic Roman traditions, the same traditions which are cherished by Cesarini Emanuela and Carlo.
