Our journey through the flavours of the Molise region begins with a typical caponata; Franca serves a plate of homemade taratelli with a fresh accompaniment of boiled egg, tomato, bell peppers, anchovies, celery and cucumber. This delightful starter is the perfect opening for the meal.
Next, Franca serves ‘taccozze’, which is a dish of durum wheat pasta with fresh and flavoursome tomatoes. Then, we have a plate of delicious breaded salt cod, which is baked and then cooked ‘au gratin’, and is accompanied by stuffed peppers and raisins.
To finish, Franca serves the local speciality Ferratelle, which are similar to waffles and cooked in a special iron press, giving them their charactaristic diamond shape.
