Emilian cuisine manages to make anyone smile, even in the bleakest of winters. Margherita invites us into her house to shelter from the cold, serving an antipasto of finely-sliced local salami with home-made bread, and then a first course of pumpkin-filled tortelli in tomato sauce… A truly inviting start to the Taste Experience. 

For the second course, we have a ‘bollito misto’ a local speciality that makes use of various cuts of meat, carefully prepared with sauce and preserves. Margherita serves a side dish of beetroot and mixed vegetables. 

To finish, we have a refined dessert known as ‘la torta Duchessa’ (Duchess cake), a classic in Parma. It is made with hazelnuts, zabaione cream and chocolate cream.

Margherita welcomes us into her lovely apartment near the city walls of Parma to take us on a tour of her local flavours. This part of Italy has a particularly rich culinary heritage, and much of its produce has become famous all over the world, so you’ll already be familiar with some of these dishes! 

“In Emilia-Romagna, cooking is a very serious business indeed, and is the glue that holds families together," explains Margherita, "this is why I became such an enthusiastic cook at such a young age.”
