Parma is a small but enchanting provincial city with a French air and a great culinary tradition. Splendidly framed by Parma’s beautiful historical center, Maria Cristina welcomes us in her enchanting residence.

Here, in this house that gives access to a garden of secret beauty in the back, we have the occasion to meet our Guide who – as she tells us – has always loved to cook, ever since she was a little girl. Her passion for cooking was passed down to her by her mother and her grandmother who, with great mastery, would serve up extraordinary menus of which she holds the secrets today.

Maria Cristina has deep knowledge of the typical cuisine of the Parma tradition, which is rich in flavours. The recipes she wants to share with you are truly traditional.

To begin, we taste the typical and very flavourful 'salame strolghino di culatello' together with a tastings of aged parmigiano cheese, with the unmistakable flavour given by its ancient traditional preparation. For the first course, a 'pasticcio di anolini', a casserole which is a homage to the ancient egg pasta which finds its roots here in Parma, traditionally made according to a family recipe passed down from generation to generation.

Next is the traditional Rosa di Parma (rose of Parma), a sumptuous baked pasta roulade with a rich prosciutto and parmigiano filling. On the side are fresh green beans sprinkled with parmigiano. Finally, a delicate 'crostata di susine' (plum pie) concludes a culinary experience in the name of tradition and passion, that of Maria Cristina for the cuisine of her land.
