Palermo’s cuisine is a wonderful representation of a vibrant and multicultural history, bringing together ancient traditions with the freshest local produce. The Arab rule over Sicily brought over many new crops from overseas that flourished in Sicily’s fertile soils and warm climate, and obviously had an enormous influence on the region’s cuisine.
Antonella begins this Taste Experience with a platter of salumi and local cheeses served with a preserve of local courgettes and onions. Next, for the first course, she serves “Riso o’ fornu”, a baked rice dish with veal, tomato, onion, pecorino cheese, eggs, currants, pine nuts, ham and local ‘tuma’ cheese. It’s a rich dish that is a celebration of Palermo’s finest produce, as is the second course, “Spitini palermitani”, skewers of pork, caciocavallo cheese, primo sale cheese, onion and bay leaves, covered with breadcrumbs and Mediterranean herbs. On the side, Antonella serves an irresistible local delicacy “Ficatu ‘ri sette cannoli”, tender pieces of pumpkin in ‘agrodolce’ (‘sweet and sour’ vinegar sauce), a dish that was originally sold in the famous Vucceria market in Palermo’s centre.
We hope you’ll have room left for dessert, because Antonella prepares a showstopping taste of Palermo’s finest pastries. Tartlets filled with homemade cream and local fruit, the iconic Sicilian cannoli filled with sweet ricotta cream, and ‘baci di dama’ biscuits (Ladies’ kisses). A fabulous menu for a fabulous city! Antonella lives in the centre of Palermo, leading a busy life as a mother of six and a housewife. She loves delighting her family with her wonderful Sicilian cooking, experimenting with new flavours and colours, whilst at the same time staying true to the ancient traditions of the island’s cuisine. Antonella’s cooking reflects her deep respect for the island’s colourful identity, which is largely due to its position as a ‘crossroads’ between the Eastern and Western worlds. Sicily, over thousands of years, has been ruled by the Greeks, Romans, Arabs and Normans, forming a truly multicultural identity. There’s no better place to learn about this fascinating and unique culture than at the table, where ancient traditions live on through family recipes. Antonella can’t wait to welcome you into her home for a taste of the real Sicily!
