From appetizer to dessert: a thousand flavours of fruit

Dusica welcomes us in the centre of Florence, just few steps away from the gorgeous cathedral of Santa Maria del Fiore and from the most important monuments of the city’s renaissance. Our Cesarina isn’t Florentine by birth, but “by customs”. She has been living in the Tuscan capital for several years now, slowly falling in love with it and learning its customs and culture.

Above all, Dusica loves its cuisine and has decided to interpret the dishes of the regional tradition as a passion.
A tradition made of simple and tasty recipes which delve their roots into the history of this splendid territory.

The secret of the Cesarina
Florentine not by birth but by customs, I have decided to give my interpretation to the dishes of traditional Tuscan cuisine.

Few combinations are as perfect as cheese and fruit. That is why Dusica opts for pears and pecorino cheese to begin her journey through traditional Tuscan flavours. This delicious appetizer is brought to the table, made even more special by the flavor of nuts for a simple but winning combination.

To follow, a great classic of Tuscan cuisine: spinach gnocchi nudi with a vegetable filling. For the second course, Dusica serves 'stiracchio' a very traditional rural dish with a base of meat, tomatoes and onions. As a side dish, peas à la Fiorentina, which are mixed with Tuscan rigatino, pancetta and a sumptuous potato tart. 

To round off the evening, we have a classic Summer dessert: Chianti pears. After a pear starter, for dessert we have sugared and baked pears, with a touch of cinnamon and Chianti wine. This delicious dessert ends the Taste Experience on the perfect note.
