Our Cesarina welcomes us to her grandparents' farmstead, in the middle of the countryside near Tortona. “In the winter - she explains - there is a little dining room with a chimney and a nice table”, weather permitting, we can enjoy the typical dishes of this area “under a veranda, where you can admire a view our countryside”. Hosting guests with a passion for home-made food is a great opportunity for her: “this way I can introduce more people to the recipes my beloved mother left me as a legacy”.

The secret of the Cesarina
My mother left me a legacy of dozens of typical recipes, and I still serve them to my guests today.

Andreina begins her Piedmontese Taste Experience with a fresh salad of Merella chickpeas, a legume cultivated in the nearby Novi Ligure which is well-known for its fine texture. 

Next, she serves tagliatelle with saffron harvested in the Scrivia valley, full of intense but delicate layers of flavour. This is a classic dish from the North Appenines. For the second course, Andreina prepares a zucchina and Robiola goats cheese quiche accompanied by a vegetable stew from her own garden. 

We round off with a refreshing sorbet of Volpedo peaches, an incredibly juicy variety from the countryside around Tortona.
