Franca welcomes us into her house in Ferrazzano, an ancient settlement that is spread out over the hills around Campobasso, the regional capital of Molise. Franca’s village is on a hill surrounded by beautiful pine forests, and there is a breathtaking panorama from its peak, which overlooks the Mainarde and Matese mountains, with glimpses of the Majella Maiella mountain range and the city of Campobasso.
Our Cesarina is keen to guide you through the flavours of the stunning Molise region. Her local cuisine is particularly rich and varied, with influences from the surrounding regions of Abruzzo, Campania and Puglia. In this Taste Experience, you will also sample one of the culinary treasures of Franca’s town, ‘insaccati’ sausages.
This Taste Experience is a real voyage of discovery, revealing the rich culinary traditions of the Molise region. We begin with a rich starter of cheese and salami. Franca serves up some her region’s culinary treasures, including ‘soppressata’ and ‘ventricina’ sausages, dried sausage, delicious caciocavallo cheese and creamy ricotta. This is accompanied by ‘pizza gialla’, a typical delicacy from central Italy made with cornflour.
For the first course, Franca serves cavatelli pasta with mixed meat ragù sauce, all masterfully handmade by Franca. Next we have a Molise-style rabbit stew, delicately flavoured with sage leaves with a side of peppers in oil and vinegar.
To round off the Taste Experience, Franca serves a delicious ricotta tart accompanied by a selection of fresh seasonal fruit.
