You can find your way to Rosa’s delightful home through the colourful, winding streets of Bologna’s historical centre. Make sure you take the time to admire the ancient buildings and porticoes unique to this stunning city! Rosa’s apartment is just off the main shopping street, Via dell’Indipendenza, just a stone’s throw away from Piazza Maggiore and the Due Torri. 

Rosa is a lawyer by profession, and fills her spare time with sport and cooking. She’s lived in the city for over 45 years, and is passionate about the area’s culinary traditions. “I took a great cooking course where I learned to make fresh pasta and iconic Bolognese dishes.”

Description

It’s always a treat to whet your appetite with an antipasto, so Rosa serves up delicious ‘polpettine’, simple meatballs which are fried and enriched with various spices.

For the first course, Rosa serves a dish that needs no introductions… Lasagne, one of the city’s most famous delicacies. She then brings another iconic dish to the table, cotoletta alla bolognese, prepared in the city’s trademark style: the veal fillet is cooked in stock before being topped with cured ham and a generous sprinkle of parmigiano reggiano, and is then fried. This rich second course is served with a delicate chicory side dish for a perfect balance. 

For dessert, we have a refreshing ‘coppa al mascarpone’ - what could be better way to round off such a delightful Taste Experience?
