This Taste Experience begins with delicious pork ‘cups’, a typical Roman starter made with cured pork and porchetta ham, with salsa verde and raw vegetables from Chiara’s garden.

For the first course, Chiara serves gnocchi ‘alla romana’, in a butter and pecorino cheese sauce, cooked in the oven in a terracotta dish to give them a delicious crispy top. Next, we have delicious tripe in sauce in the roman style. Beef offal is cooked slowly in a mix of herbs and spices, tomato passata, mint leaves and a dusting of Pecorino cheese. On the side, we have ‘tordi matti’, rolls of horse meat filled with the fat trimmed from cured ham, garlic and parsley. We also have fresh courgettes with mint leaves.

We round off with a chocolate and rum dessert, which is served with wine donuts.
