La Cesarina

Cecilia, our Roman Cesarina, introduces herself: “The dishes I serve are of the Roman province, and particularly of Palestrina, which I learned to cook with the women of my family. I offer a Taste Experience that combines simpler vegetable-based dishes with more sophisticated dishes typical of holiday meals. I cultivate the ingredients I use with passion in my garden.

Although my family were not farmers, when I was a little girl I used to accompany my grandmother into the fields to collect chicory or borage to make fritters. In the Spring ,we would look for asparagus, and the end of the summer was the time of fennel. There was also the blackberry harvest for jams and the hunt for snails, and so on with the seasons. My passion began in this way, by getting to know my local products and then helping to cook them”.

The secret of the Cesarina
The ingredients I use are the ones I cultivate in my garden with passion.


  • Borage or zucchini flower fritters depending on the season
  • Homemade fettuccine with a roulade sauce (beef filled with mortadella, celery and carrots)
  • Polenta pizza di polenta stuffed with sausages and “ramoracce” (wild turnip greens)
  • Crostata with homemade jams
  • Hazelnut cookies

Cecilia's dishes follow ancient traditions of the province of Rome. Her Taste Experience combines simpler vegetable dishes with more sophisticated ones which are typical of traditional family holidays. We start with the antipasto, tasty borage fritters or (depending on the season) zucchini flower fritters, which all come from the garden that Cecilia cultivates passionately.

As a first course, she serves homemade fettuccine with beef roulades filled with mortadella, celery and carrots. Next, our Cesarina serves polenta pizza stuffed with sausages and “ramoracce”, wild turnip leaves. To finish, a fragrant crostata pie with homemade jams and sweet hazelnut biscotti.

Grazie a Cecilia io e mia moglie abbiamo scoperto un piatto che non conoscevamo: La tigama. Un piatto semplice della tradizione romana ma davvero gustoso e genuino, che non avevamo mai trovato in nessun ristorante di Roma. La scoperta di piatti nuovi è sicuramente il motivo per cui proveremo altre Cesarine appena ne avremo la possibilità.
