This is a Taste Experience dedicated to famous dishes of the Modena area. For a traditional starter, we have baked gnocco, and a focaccia bread flavored with typical mountain ciccioli, which are made from cuts of pork fat. For an extra touch of luxury, shavings of Parmigiano Reggiano cheese are served, followed by tender rosettes embellished with heart of ham, parmesan cheese and sauce.
For first course, according to the custom in middle-class families, Elena will serve flans made with Parmigiano Reggiano cheese on a bed of baby chicory, garnished with a rich layer of besciamel sauce. The second course is the house specialty: roast pork with traditional Modena balsamic vinegar, and creamy mashed potatoes.
The perfect ending to this meal are pears 'Regina Margherita', cooked gently in white wine with sugar and vanilla, placed on a layer of marzipan enriched with custard then covered with chopped almonds and zabaglione cream. If that isn't enough for your sweet tooth, you can pamper yourself with a classic cake made with Vignola chocolate and coffee, called the 'Barozzi'.
