Le Cesarine

Secrets of the ancient vinegar-makers of Modena

Modena / Emilia Romagna

La Cesarina

Elena's beautiful house is nestled within the historical center of Modena, located near the ancient city canals. The gourmet proposal of our Cesarina, also have historical roots created from cherished family culinary traditions:  as evidenced by the ancient household vinegar maker, located in the attic of the house.

In the ancient families of Modena, it was traditional to give several vinegar barrels as dowry to a future bride: a custom that was respected when Elena married Roberto, and that the couple is also continuing for their daughter.

This is a Taste Experience dedicated to famous dishes of the Modena area. For a traditional starter, we have baked gnocco, and a focaccia bread flavored with typical mountain ciccioli, which are made from cuts of pork fat. For an extra touch of luxury, shavings of Parmigiano Reggiano cheese are served, followed by tender rosettes embellished with heart of ham, parmesan cheese and sauce.

For first course, according to the custom in middle-class families, Elena will serve flans made with Parmigiano Reggiano cheese on a bed of baby chicory, garnished with a rich layer of besciamel sauce. The second course is the house specialty: roast pork with traditional Modena balsamic vinegar, and creamy mashed potatoes.

The perfect ending to this meal are pears 'Regina Margherita', cooked gently in white wine with sugar and vanilla, placed on a layer of marzipan enriched with custard then covered with chopped almonds and zabaglione cream. If that isn't enough for your sweet tooth, you can pamper yourself with a classic cake made with Vignola chocolate and coffee, called the 'Barozzi'.

Our customers says

"This was one our best experiences in Bologna. Our hosts, Gianni and Lorenza, were a well travelled and interesting couple about similar ages to ourselves. They also spoke perfect English, having lived in Canada for many years. Gianni taught us how to make tortellini from scratch which we ate with our meal. Gianni is a fine and the rest of the meal was excellent. Their place is an apartment in a medieval Palazzo which was well worth seeing on its own. We really enjoyed it."

"Our dinner with Angela was the best experience of our visit to Rome. The food was delicious, and it was delightful to talk with Angela and her Mother about food, life in Rome, work, and the state of the world in general. This experience would have been impossible for us without Le Cesarine."

"We had a wonderfull lunch time with Tania (30 minutes outside from Bologna). She was an excellent host and very charming. We enjoyed her traditional courses (antipasti, strozzapretti con salsiccia, brasato al limone) very much and could highly recommend her. The atmosphere was very relaxed and it was easy to drive to her. We would come again."
