Sourdough bread, desserts and typical dishes of Piedmont

In this course, Luisa will teach us how to prepare products with natural yeast from start to finish - beginning from the choice of flour types, before moving on to how to use a kneading machine, as well as cooking in the wood-fired oven. The participants will work partly using dough prepared in advance by Luisa, in order to have more time to make different bread shapes and forms. Everyone will receive some starter yeast and sourdough that they can rise and cook themselves at home.

The bread will be eaten at the end of the lesson with Turgia salami, anchovies in green sauce, fresh Tomino cheese, green omelette with herbs and a variety of Piedmontese sauces, while the desserts will be made with custard and homemade jams, all accompanied by an excellent regional sweet wine.

We also have three typical dishes of the Piedmontese tradition: “agnolotti”, a fresh kind of pasta stuffed with a mixture of meat and vegetables, anchovies in green sauce and “bagna rossa”, as well as an exquisite hazelnut cake from the Langhe.

Luisa goes further than the usual market tour, as an alternative offers a visit to the near mill, where you can learn about the art of flour production.
