Paola begins this journey through Trieste’s tradition by plunging us into sea flavours. Seared octopus is brought to the table, first boiled and then panfried with scrumptious caramelized cherry tomatoes and equally tasty celery and turnip drops. A rich and intriguing entrée which celebrates the traditional flavours of Venezia Giulia.

As a first course, a classic of Trieste’s cuisine. Our Cesarina brings us 'black and white' polenta with stewed cuttlefish: a meeting between the farming traditions of Northern Italy and the exquisite taste of the Adriatic sea, with a hearty yet refined result. To follow, Paola serves us breaded and seasoned sea bass fillets, together with delicious buttered potatoes.

To close, dessert. Our Cesarina chooses a semifreddo, a typical Italian dessert made of semi-frozen cream and meringue known for its below-zero temperature. It is with this creamy dessert that we happily end our delicious Taste Experience in Trieste.

Paola is originally from Sicily, but has lived in Trieste for years, a city that she now deeply loves. "It's my new home: modern yet ancient, maritime but linked karst plateau, with castles, palaces and the spectacular residence of Miramare." The capital of Friuli, with its rich history of influences, has truly won her over.

Influences which are also found in the local cuisine, fruit of melding between the Mediterranean and Central European cuisine. An example is the first courses and soups, but also the main courses based on meat and fish dishes. A fusion of different flavors that provides unique result and inviting results.

My passion for cooking is rooted in my childhood. I remember with joy the excitement, the aromas, and sensations that preceded each party at my house.
