Sergio's Taste Experience is entirely dedicated to the flavors of the beautiful city of Avigliana. It begins with the starter, a vegetable pie, whose ingredients vary by season. In the winter, our Cesarino prepares it with Jerusalem artichoke, a tuber with a delicate but intense taste; in Summer, with vibrantly colourful peppers. Then we have a symbolic plate of Piedmont cuisine: Bagna Cauda, a savory sauce with a base of anchovies and garlic.
For the first course, Sergio serves a pumpkin risotto with Raschera fondue, a typical cheese that is added in chunks alongside leaves of marjoram. To follow, delicious buttered carrots are the side dish of another plate characteristic of the region, Nebbiolo-braised beef. The beef is marinated in vegetables and red wine, and is then ready to be browned, for a final result that is truly tender.
Finally, for dessert Sergio offers Bonet, an artisanal amaretti and chocolate pudding, a dessert representing the best of this region's culinary tradition.
