Le Cesarine

The ancient flavors and aromas of the Irno Valley handed down from my Grandmother.

Baronissi / Campania

La Cesarina

Baronissi is in the middle of the Irno Valley between Salerno and Avellino. The ancient local recipes use the local produce of both areas, particularly renowned for its cheeses: mozzarella for example, the crowning achievement of Italian cuisine, loved around the world, as well as hand-made ricotta, which, in this valley, has been traditionally one of the simple and wholesome food for entire families.

It is here, that we find Cesarina Fortunata, who, with her great culinary experience, exalts the excellent Campania cuisine by offering recipes that are still handed down from mother to daughter, with the hope of never losing the traditional Sunday lunch with the whole family.

The secret of the Cesarina
I prepare the typical Campania dishes according to recipes that have been handed down by my grandmother Nunzia

  • Bocconcini of Campania Buffalo Mozzarella, Cured Raw Avellinese Ham, Montella Ricotta, typical Salami of Monte Terminio, homemade Pickled Vegetables (eggplant and baby artichokes)
  • Conchiglioni shells stuffed with ricotta and smoked cheese in tomato sauce (homemade sauce)
  • Braciole Veal Chops
  • Grandma Nunzia's Eggplant Parmigiana
  • Grandma's  Apple Cake

Refined selection of local wines

Fortunata takes us on a journey through the flavors of Campania, and does so by opening her Taste Experience with one of the best known local products of this region: buffalo mozzarella. This is only the beginning, however - to complete the appetizer, the table will be filled with typical Avellinese cured raw prosciutto ham, ricotta from Montella, Monte Terminio salami, and delicious homemade pickled vegetables, eggplant and baby artichokes.

As a first course, delectable 'conchiglioni' pasta shells with a ricotta and smoked cheese filling, served with strictly homemade tomato sauce. For the second course, Fortunata offers veal chops and eggplant parmigiana, an elaborate dish very popular in local cuisine, which she prepares according to the recipe inherited from her Grandmother Nunzia.

We sweetly end the Taste Experience with a delicious apple cake prepared, once again, according to Grandma's recipe.

Our customers says

"This was one our best experiences in Bologna. Our hosts, Gianni and Lorenza, were a well travelled and interesting couple about similar ages to ourselves. They also spoke perfect English, having lived in Canada for many years. Gianni taught us how to make tortellini from scratch which we ate with our meal. Gianni is a fine and the rest of the meal was excellent. Their place is an apartment in a medieval Palazzo which was well worth seeing on its own. We really enjoyed it."

"Our dinner with Angela was the best experience of our visit to Rome. The food was delicious, and it was delightful to talk with Angela and her Mother about food, life in Rome, work, and the state of the world in general. This experience would have been impossible for us without Le Cesarine."

"We had a wonderfull lunch time with Tania (30 minutes outside from Bologna). She was an excellent host and very charming. We enjoyed her traditional courses (antipasti, strozzapretti con salsiccia, brasato al limone) very much and could highly recommend her. The atmosphere was very relaxed and it was easy to drive to her. We would come again."
