Rosa Maria will take us on a journey of discovery through the typical flavors of Palermo. We will start off with eggplant caponatina, linguine fresh pasta with citrus fruits and baked Ricotta cheese from Modica, swordfish rolls, Messina-style panatine and Sicilian fried mix (complete with panelle, cazzilli and arancine), before the desserts: almond parfait served with hot chocolate and a delicate Ricotta cheese roll.

In Sicily, particularly in Palermo, there is one singular regional cuisine: pasta, olive oil, vegetables and oily fish varieties, are the four cardinal staples. The dishes prepared by Rosa Maria reflect this tradition, revised with imagination and the desire to experiment, in keeping with the ancient recipes.

Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.
