The dishes which Cecilia presents are those of the tradition of the province of Rome; her culinary experience combines simpler vegetable-based dishes with more sophisticated ones which are traditionally prepared on feast days with her family. We start with the antipasto: tasty borage fritters  or, depending on the season, zucchini flower fritters, vegetables that come from Cecilia's garden, as she is passionate about growing her own produce. 

As a first course, she serves rich homemade fettuccine with roulade sauce; beef filled with mortadella, celery and carrots. Next, our Cesarina offers tigama, a typical dish made with eggplant, peppers and zucchini stewed with “pepper grass”. To finish, she brings a fragrant crostata pie made with homemade jams and sweet hazelnut biscotti.

Cecilia, our Roman Cesarina, introduces herself: “The dishes I serve are of the Roman province, and particularly of Palestrina, which I learned to cook with the women of my family. I offer a Taste Experience that combines simpler vegetable-based dishes with more sophisticated dishes typical of holiday meals. I cultivate the ingredients I use with passion in my garden.

Although my family were not farmers, when I was a little girl I used to accompany my grandmother into the fields to collect chicory or borage to make fritters. In the Spring ,we would look for asparagus, and the end of the summer was the time of fennel. There was also the blackberry harvest for jams and the hunt for snails, and so on with the seasons. My passion began in this way, by getting to know my local products and then helping to cook them”.
