Tania welcomes us into her spacious villa in the Bolognese Appenines, with the most breathtaking panorama of the sloping hills and green valleys below. This peaceful area is about half an hour from the bustling city of Bologna, and is also close to Marzabotto, home to the National Etruscan Museum and Riola di Vergato, with its iconic Rocchetta Mattei.

Tania's cooking is a true reflection of a whole life of creativity in the kitchen. Her passion was born when she was just eight years old, when she would help her grandmother Tania taught her how to make desserts and, eventually, pizza, which is still her favourite thing to prepare today. Her love of cooking is something that she adds to every day, dedicating her free time to inventing recipes and trying new combinations. Tania's lucky guests will enjoy a whole range of the delights of Mediterranian cuisine.

The secret of the Cesarina

I love adding Parmigiano Reggiano cheese as a finishing touch, and often add shards of it to my dishes for decoration.


  • Parmigiano cheese rolls with diced mortadella and basil sauce
  • Strozzapreti pasta with sausage, peas, cherry tomatoes and Sangiovese wine
  • Roast lamb cooked traditionally, in milk and Parmigiano

To begin this Taste Experience in the Bolognese hills, we have a delicious Parmigiano Reggiano basket with mortadella cubes and a basil garnish.

For the first course, Tania serves handmade strozzapreti pasta in a sausage, pea and cherry tomato sauce, reduced in local San Giovese wine. The wine’s warm, spicy tone is the perfect match for the sausage. Next, we have delicate roast veal with shards of Parmigiano and a milk reduction, accompanied by vegetables au gratin.

For dessert, our Cesarina serves a delectable ‘zuppa inglese’, a dessert made from layers of sponge cake soaked in Alchermes, alternated with crème pâtissière and  custard, and scattered with dark chocolate.
