Tania welcomes us into her spacious villa in the Bolognese Appenines, with the most breathtaking panorama of the sloping hills and green valleys below. This peaceful area is about half an hour from the bustling city of Bologna, and is also close to Marzabotto, home to the National Etruscan Museum and Riola di Vergato, with its iconic Rocchetta Mattei.

Tania's cooking is a true reflection of a whole life of creativity in the kitchen. Her passion was born when she was just eight years old, when she would help her grandmother Tania taught her how to make desserts and, eventually, pizza, which is still her favourite thing to prepare today. Her love of cooking is something that she adds to every day, dedicating her free time to inventing recipes and trying new combinations. Tania's lucky guests will enjoy a whole range of the delights of Mediterranian cuisine.

The secret of the Cesarina

I love adding Parmigiano Reggiano cheese as a finishing touch, and often add shards of it to my dishes for decoration.

Refined selection of local wines


To begin this Taste Experience, we have an inviting slice of ‘erbazzone reggiano’, a puff pastry tart filled with chard, pancetta bacon and vegetables, flavoured with a drizzle of balsamic vinegar.

Next, we have a delicious serving of tagliatelle pasta with bolognese ragù, a fresh egg pasta masterfully handmade by our Cesarina with the region’s most famous sauce. For the second course, Tania serves another local classic: thyme-infused cotoletta in sauce, with a side of ‘friggione bolognese’, a flavoursome sauce made with white onion and fresh tomatoes.

To conclude our tour through the flavours of the Bolognese hills, we have a tagliatelline cake infused with lemon, filled with crunchy amaretti biscuits and wine-soaked almonds.
