Tuscan Kitchen Classics: from salt cod with zimino sauce to poached pears in Chianti wine

Description

Dusica takes us on a voyage of discovery through the most famous dishes of Tuscan cuisine. From the rich starter of  'coccoli', soft pillows of bread with ham and stracchino cheese, and toasted bread with sweet-and-sour onions, to the first course of Maremmana style 'acquacotta' soup and Florentine crespelle pasta, we will learn to recognise and understand a whole range of flavour combinations. Another typical Tuscan dish is salt cod in 'zimino', a vegetable sauce containing chard, spinach, garlic and parsley, which Dusica will teach us how to prepare in her first lesson.

We finish off each lesson in style with the desserts, respectively a soft round 'berlingozzo', pears infused with Chianti wine and a sumptuous 'Bischeri' cake, which has an indulgent rice and chocolate filling.

Dusica welcomes us in the centre of Florence, just few steps away from the gorgeous cathedral of Santa Maria del Fiore and from the most important monuments of the city’s renaissance. Our Cesarina isn’t Florentine by birth, but “by customs”. She has been living in the Tuscan capital for several years now, slowly falling in love with it and learning its customs and culture.

Above all, Dusica loves its cuisine and has decided to interpret the dishes of the regional tradition as a passion.
A tradition made of simple and tasty recipes which delve their roots into the history of this splendid territory.
