Michela welcomes us into her home in Varmo, a small town in the province of Udine, which is found at the confluence of the rivers Varmo and Tagliamento. Our Cesarina has always been very attached to where she comes from and is fascinated by her hometown’s history – so much so, that she has done a great deal into her local traditions to find out as much as she can about her roots. Her curiosity has been rewarded, as she is now an expert in the food tradition that defined her childhood.
Guests at Michela’s dinner table will take a journey back in time; her humble and authentic cooking awakens cherished memories of country life in Friuli for all to enjoy.
This Taste Experience begins with a selection of friulian sausages to start, introducing us to a wealth of local flavours, served with delicious fried edible flowers – a wise choice.
Next, we enjoy a distinctive first course of ‘blecs’ or ‘biechi’ (a handmade pasta) served with smoked ricotta. For the second course, Michela serves frico, which is a typical fried potato cake that is crunchy on the outside but soft on the inside, made with shredded potato, onion and hard Montasio cheese. On the side, we have a fresh lamb’s lettuce salad with a sprinkle of ‘siccoli’, which are shards of dried pork, similar to pork scratchings.
We finish on a sweet note with a ‘gubana’, which is a delicious cake made on special occasions in Friuli; it is made with a sweet dough, rolled and filled with hazelnuts, almonds, grappa, pine nuts and breadcrumbs.
