American & Italian Apple Pie for a special Independence Day
For Americans, Apple Pie is not just a delicious dessert, but a real patriotic flag, that cross gastronomy borders. So, perfect for celebrating the Independence Day! Also for Italians, the apple pie recipe is a symbol par excellence, because is the most traditional family recipe, hands down from generation to generation. Th two recipes are different in part for the ingredients but are very similar in the preparation.
Apple Pie Recipe (USA)
For the dough
- 11 oz of flour
- 2 oz of sugar
- 5 oz of butter (room temperature)
- 1 pinch of salt
For the filling
- 28 oz of Grannie Smith apples
- 4 ½ oz of brown sugar
- ½ lemon (juice and a little bit of peel)
- 1 teaspoon of maizena
- 1 pinch of cinnamon powder
- 1 pinch of cloves powder
- 1 pinch of nutmeg powder
- ¾ oz of butter
- 1 egg
- sugar for decoration
For the filling: peel the apples and cut them in rather small pieces. Put them in a bowl with a bit of sugar and squirt over it the lemon, to prevent that they become dark. Add the grated peel of the lemon, the cinnamon, the cloves powder, the nutmeg and the maizena. After that jumbled up all. For the dough: put in a bowl the flour and the sugar, with a pinch of salt and the butter flakes. Knead all until you get a grainy dough. Pour slowly the cold water over the dough and create a homogeneous ball, that you will have to cover with the wrap and put in the fridge to stand about 30 minutes.
At this point take the pat in the fridge and separate it into two parts. Use the rolling pin to create two disks of dough: one of the two will be slightly bigger because it twill serve as a base. Roll it out in a baking tin (24cm od diameter) previously buttered and floured, so that it covers also some centimetres of the board.
Cover the surface with the filling and add some butter flakes. Take the other disk of dough and put it over the filling, paying attention that it doesn’t break and that covers all. Brush the Apple Pie surface with the egg, previously beaten in a bowl, and then, with a knife, do some cuts over the cake to get the steam out of the inside of the cake. Then sprinkle the surface with the sugar and put the cake in a preheated oven at 180 degrees for 40 minutes.
Serve it still warm.
Italian Apple Pie
- 11 oz of flour
- 3 apples
- 9 oz of sugar
- 3 eggs
- 3 oz of butter
- ¾ cup of milk
- ½ oz of baking powder for desserts
- 1 lemon
The first thing to do is peel the apples, cut them into wedges and put them to macerate with a little sugar and lemon juice in a bowl. After that, whisk the egg yolks with the sugar until a light and fluffy cream is obtained. (leaving the egg whites aside). Add the previously sifted flour, the melted butter, the milk and the baking powder to the mixture. Whip the egg whites until stiff, then gently incorporate them into the mixture. Mix and mix well from bottom to top to prevent the dough from being disassembled. Pour the mixture into a greased and floured baking pan with a diameter of about 24 cm.
Reduce 2/3 of the apple slices in small pieces and mix them with the mixture; the remaining cut them into very thin slices. The dough should be sufficiently dense so that the apple slices remaining without sinking into the cake can be placed over the entire surface.
Cook the apple pie in a pre-heated oven for about 40 minutes at 180 ° C.
